Fizzy Witchy Brew Mocktail

There’s something a little bewitching about this drink. The way it transforms colorfully and shimmers like a spell. Our Fizzy Witch Brew was born from equal parts curiosity and herbal craft and made to stir a little magic into the everyday.

This cold infusion is made by combining butterfly pea flower, spearmint, tulsi basil, and stevia for a drink that soothes just as much as it enchants. The inky blue hue shifts with each and every sip to reveal hints of mystery within. Simple and fun to play around with. You can try topping it with blueberry Topo Chico or sparkling mineral water for a flicker of effervescence, like bubbles rising from a bubbling cauldron. This recipe was developed with my friend Jenny @ Apotheosis.

Why it works wonderfully

  • BUTTERFLY PEA FLOWER-> Butterfly pea flower brings a touch of magic to any blend. It’s earthy, vibrant, and quietly powerful. Beyond its mesmerizing indigo hue, it’s rich in anthocyanins which are the same antioxidants found in blueberries. These anthocyanins are pH sensitive and shifts the color with acidity. It has long been used to calm the mind and support focus. I just love how the color shifts with a splash of citrus, a simple reminder that even plants can play. It’s beautiful and full of gentle nourishment for both body and spirit.

  • SPEARMINT-> Spearmint brings a cool, gentle freshness that brightens any blend. It’s softer on the stomach than peppermint and often better suited for sensitive digestion. Traditionally used to ease tension and support clarity, it offers calm energy without the bite.

  • TULSI BASIL-> Tulsi basil brings a calm, herbal depth to this blend. Its flavor is light and slightly sweet with a comforting warmth that rounds out the freshness of the other ingredients. Traditionally valued for supporting focus and easing stress, tulsi offers a steady sense of balance that feels both grounding and clear.

  • STEVIA LEAF-> Stevia adds a gentle sweetness that feels clean and balanced. It softens the sharper edge of mint and creates a smoother and more rounded flavor. As a natural and sugar-free sweetener, it brings harmony to the blend without weighing it down which helps in keeping each sip light and refreshing.

  • TOPO-CHICO OR SPARKLING/MINERAL WATER-> An optional mix-in option that helps contribute the the fizzy fun! Topo-chico has a hibiscus and blueberry flavor that could pair nicely.

  • BERRIES -> Blueberries and blackberries add to the rich color and sweetness, but they also contain the same anthocyanins or antioxidants as mentioned.

    Combined, these herbs create a cooling and calming mocktail that soothes the senses and supports from within. It’s gently restorative, with a quiet kind of magic that invites you to slow down and unwind.

Ingredients & Suggestions

<Herbs>

  • Butterfly Pea Flower (dried)

About Me

making the Mocktail

You’ll need:

  • Infusion of Herbs (I prefer it cooled, but you can also try it warm!)

  • Additions and Mix-ins

  • Pitcher/Container

  • Straining method

  • Garnish: I offered citrus slices as an option, and had edible glitter to add in!

Instructions

(1) MAKE THE INFUSION: Add your herbs into your chosen vessel, I used a french press for this one and simply stuck it in the fridge. You could also opt for a hot infusion, strain and then cool with similar flavor but a bit better extraction.

(2) SERVE: Add your base infusion into a glass. Muddle some blueberries and blackberries in the bottom if preferred.

(3) TRANSFORMATION: Add in some lemon juice for the gorgeous color change. I also opted for some edible sparkles here for a final effect.

(4) MIXER: Add in your sparkling water to topo chico if using. You could play around with different simple syrups as well like we did in the lemon lime slime mocktail.

(5) GARNISH: This drink in itself is already quite magical so you can keep as is or maybe add a slice of citrus to the glass rim.

A note on our ingredients

This transformative recipe was designed for my in person mocktail event. Each ingredient is chosen with intention, but you can easily substitute or add herbs to fit what you have on hand. While originally crafted with skin and stress in mind, this mocktail can invite curiosity and play. Butterfly pea flower, also known as Clitoria ternatea, has long been revered in Ayurvedic and Thai herbal traditions. Beyond the striking colorful hue it’s celebrated for its antioxidant, anti-inflammatory, and nervine properties.
